1. What are the ingredients in Tayyib Tree's Kimchitsu?
- Tayyib Tree’s Kimchitsu is made from fresh, quality vegetables, including napa (Chinese Leaf) cabbage, carrots, radish, spring onions, ginger and garlic. It’s seasoned with gochugaru chili pepper flakes, and sea salt, and naturally fermented to develop its rich flavour and probiotic content. A touch of organic rice powder and date syrup is added to help with the fermentation but don't add significant carbs, making it keto and paleo friendly.
2. What makes this kimchi "raw" and "probiotic"?
- The kimchi is labeled "raw" because it is unpasteurized, meaning the beneficial probiotics that develop during fermentation are preserved. These probiotics can help support a healthy gut and improve digestion.
3. What are the health benefits of eating kimchi?
- Kimchi is rich in probiotics, which can improve gut health, boost the immune system, and aid in digestion. It’s also high in vitamins A, B, and C, and contains antioxidants that help fight inflammation. Additionally, the fiber content in kimchi supports digestive health.
4. How should I store Kimchitsu after opening?
- After opening, store the kimchi in the refrigerator. The fermentation process will continue slowly, so it’s important to keep it cool to maintain the desired flavor and texture. Properly stored, it can last several months. If you notice any signs of spoilage such as discoloration, an "off" smell or taste, discard the kimchi.
- The proper refrigerator storage temperature to prevent spoilage is between 1°C and 4°C. Keeping food in this range slows bacteria growth and prevents spoilage. We recommend using a fridge thermometer to monitor temperature—you’ll be surprised how much it can fluctuate between shelves. This helps prevent food wastage, saving money and benefiting the environment.

- The spice level of Tayyib Tree's Original Kimchitsu is moderate-to-medium, offering a balance between heat and flavor. It provides a gentle kick without overwhelming the palate, making it enjoyable for most people.The Mexizen Spicy Kimchitsu is medium-to-spicy and provides a zing and heat with the addition of jalapeno and baby yellow peppers and provides the right heat for adventurous taste buds.
8. How long will a jar of Kimchitsu last once opened?
- Once opened and kept refrigerated, kimchi should be consumed within a month of opening (or 3 months past the production date listed) for best flavour. The flavour will continue to develop over time, becoming tangier as it ages. Always use a clean utensil to avoid introducing contaminants.
9. What is the fermentation process of this kimchi?
- The vegetables are salted and mixed with spices, then left to ferment naturally in a controlled environment. This process allows beneficial bacteria to develop, which gives kimchi its unique flavor and probiotic properties. 11. Why did my kimchi leak during shipping?
Kimchi is a fermented product that continues to release gases, especially in transit. While we do our best to seal jars securely, and place the jars inside clean food-safe bags, occasional leaks can happen due to pressure build-up and kimchi juice may leak out of jar into barrier bag. To minimize any additional leakage, we recommend refrigerating it upon arrival and opening it slowly over the sink.
